Ingredients

  • 200g mixed nuts and coconut flakes
  • 2 tbsp goji berries
  • 50g coconut flour
  • 100g vanilla protein powder
  • Generous sprinkle of Himalayan Pink or Celtic Sea salt
  • 1 heaped tsp cinnamon
  • 1 tsp vanilla extract
  • 50g coconut oil
  • 70g cashew butter
  • 2–3 tbsp water
    OPTIONAL

  • If the protein powder isn’t sweetened you may wish to add some raw honey, liquid stevia or xylitol to taste

Method

  1. Place the nuts, coconut and goji berries in a food processor and blend until finely chopped.
  2. Add the flour, protein powder, cinnamon and salt.
  3. Finally blend in the coconut oil, cashew butter and vanilla extract.
  4. The mixture should start to form a sticky dough. Add a tablespoonful of water to help it bind. You should be able to take a small handful and shape into a small ball (squeeze it to help the mixture bind). If the mixture is still falling apart, add another 1–2 tablespoonfuls of water and try again.
  5. Place the balls in the fridge to set.
